What the debate really highlights, says Lipinski, is the need for more research. “If we did have that improved data collection system for farmers, maybe we would be able to do some comparisons,” he says, to compare just how much produce goes to animal feed, landfill or is plowed back into the land, both before and after working with a rescued produce company.
Only Moseley and others in the field argue that some crops don’t, in fact, have these strong secondary markets. Sales of apples have remained fairly constant for decades, for example, so there’s a well-established relationship between growers and producers, but with a crop like kale, the increase in consumer demand is relatively recent, so those relationships just aren“If anything, we need more people working on this, faster and more urgently,” says Moseley.
