Mr Hirte likened the Black Jaguar to champagne truffle or a $3000 bottle of wine – it is a delicacy for connoisseurs to savour. He said a Sydney man flew to Melbourne last week hoping to try it early, only to be told he had to wait for Proud Mary’s official launch at its two Collingwood cafés on Monday.
Mr Hirte says customers must be prepared to pay more for good food and drink, pointing to the announcement made last month that Noma, known as the “best restaurant in the world”,And the ideal way to do this, he says, is for top=quality products to be properly valued. Otherwise, Mr Hirte warns, consumers will be left with a lifeless mass of megabrands and no smaller businesses.“The coffee market concerns me because people are buying cheaper and cheaper products,” he said.
