Despite rave critical reviews and popularity since transforming their pop-up S+M Vegan into a brick-and-mortar in 2020, the cost of ingredients and takeout containers had risen so much recently that Chia and Stanbridge couldn't even afford to pay themselves.So they put their heads together and came up with a plan to make it through the winter. With a bunch of staff on vacation for the month of December, they needed a solution that would work with a smaller team.
"We've done a lot of supper club-type dinners before. We worked in fine dining. We can do this," Chia said."... We figured out a way to meet our costs but with a pared-down crew. And that looks like eliminating the volume, eliminating all the unknowns, knowing exactly how many people we're feeding tonight and what they're getting.
