On May 15, 1921, Greek immigrant Peter George Poulos realized his American dream. Using savings from shining shoes and selling newspapers, he opened a candy factory-cum-ice-cream parlor and diner whose operating hours extended from breakfast until long past midnight. With Chicagoans desperate for social outlets during Prohibition, the Security Sweet Shop was a hit. Al Capone left a signed photo with the advice, “watch the register.
