Sounds counterintuitive, but you need to eat breakfast on Thanksgiving day. Here’s why:
that the last thing you want to think about is feeding the crowd of people staying in your house a big breakfast. But I've learned from experience in a family of people who get especially hangry that taking that extra half hour in the morning to feed everyone a proper breakfast makes the whole day go smoother. Because cooking on an empty stomach is no fun, drinking on an empty stomach is dangerous, and entertaining on an empty stomach is just downright foolish.
The oven is usually completely occupied on Thanksgiving morning, so I like to make a Thanksgiving breakfast that's a, stovetop-only affair. I grab the largest skillet in the house and sauté some onions and mushrooms. I add a splash of vinegar, a whole bunch of torn-up kale, and grape or cherry tomatoes to the skillet and cover it until the kale wilts.
Once you try it out, you'll see why my family has made this dish a part of our Thanksgiving tradition. A big pan of vegetables and eggs fuels us up, without being too filling, as we start a day of cooking and eating and celebrating. And it's easy to riff on this formula: you can replace the kale with another hardy green, or swap in bell peppers for the mushrooms.
