Oakland’s Rico Rico Vegano draws in vegans and omnivores alike with its creative tacos and hot pink tortillas.

Pitaya, or dragon fruit, is responsible for the tortillas’ pink color. Vegano mixes the fruit’s pink flesh into its homemade corn tortillas. The fruit turns the tortillas pink, softens them slightly and imparts a subtle sweetness and nuttiness. “That restaurant in Mexico City was making it out of beet juice, but the beet juice was a little too earthy for us,” Montero, 35, said. “The pitaya has a good flavor, and it has that cool color also.”

Vegano’s taco offerings include the coliflor, which is filled with extra-crispy fried cauliflower and topped with finely shredded purple cabbage, as well as the camaron, starring an uncannily convincing imitation shrimp made of konjac, a starchy root vegetable native to China. The taqueria’s other meat substitutes include marinated hibiscus, seared seitan, soy chorizo, cactus and mushrooms.
