Crowds still line up in Santa Barbara a half-century after McDonald’s franchisee Herb Peterson invented the Egg McMuffin here.

I recently set out to have one served at the source, at the very spot where an egg was first cracked into a Teflon-coated iron ring and grilled on a flat top.Herb Peterson wasn’t a natural fit to invent a fast-food icon. He didn’t even start out by working in kitchens creating recipes. Instead, he was born and raised in Chicago, and after serving in the Marines during World War II and earning the rank of major, he returned home and started working for D’Arcy Advertising.
At the encouragement of McDonald’s CEO Ray Kroc — who had a 549-acre ranch, complete with an industrial kitchen where early Egg McMuffins were tested, in Santa Ynez — Peterson set off for the West Coast to open one of the restaurant’s franchises of his own in Goleta, a town of 32,000 just north of Santa Barbara proper.Peterson soon expanded to multiple McDonald’s locations in greater Santa Barbara, including a coveted spot right next to the onramp of Highway 101.
The answer, he found, was in converting his beloved eggs Benedict into something a little more portable. According to the Santa Barbara Independent, Peterson commissioned a blacksmith to create an iron ring and coat it in Teflon. This would cook the egg in a circular shape to come out roughly the same size as the muffin.
