Here, chicken cutlets, pounded thin, are breaded and shallow fried, then slipped into fresh pitas along with a few avocado slices and tomato rounds. A generous drizzle of lemony tahini sauce dresses up the combination and lends a little creaminess. A final sprinkling of the pungent green herb blend za’atar is optional but highly recommended. “This is the embodiment of Israeli food,” Mr. Solomonov explained. “It’s a melding of cultures. The breading for the cutlets is made from matzo meal and beaten egg. To the latter the chef likes to add hawaij, a spice blend that includes turmeric, coriander and cumin. While the matzo coating is lighter than the traditional bread-crumb exterior on a schnitzel, “it’s still important to shake off the excess so your oil stays clean,” Mr. Solomonov advised.
To keep the cutlets from absorbing too much oil as they fry, maintain a steady medium-high temperature. “I only fry a few at a time so the oil doesn’t drop too low,” Mr. Solomonov said. “I also clean out the oil, with a fine mesh sieve, between batches.” The schnitzels are good served warm or at room temperature. “This is a perfect sandwich,” Mr. Solomonov said. “There’s creaminess from the avocado, crispiness from the chicken, softness from the bread and sharpness from the tahini.
