Position racks in the top and bottom thirds of the oven, then heat the oven to 375 degrees. Line 2 large baking sheets with parchment paper.Hull the strawberries, then cut in quarters from top to bottom. Cut the quarters into ¼-inch slices crosswise. You should have about 2 cups. Spread on a paper towel to drain any excess water, then transfer to a bowl and toss with the lemon juice and 2 tablespoons sugar.Whisk the flour, baking powder, salt and remaining 1/3 cup sugar in a large bowl.
Cool completely on the sheets on wire racks. Serve at room temperature. These are the best the day they’re baked.Substitute 2 cups blueberries for the strawberries, but don’t toss them with lemon juice or sugar. Instead, increase the sugar in the dough to ½ cup, then proceed as above.
