Chef Akira Back’s namesake restaurant opens May 6, 2022.

ByDespite the ground-up build — in an area that was once a giant field of grass — Akira Back is not as giant in size as it probably could have been. The restaurant seats just over 150 people inside and out, and it looks out over a man-made pond in front of the bustling State Highway 121.

For the new-style carpaccio, diners choose octopus, flounder, halibut or salmon. The fish is dressed with yuzu, ginger, garlic and chive, then lightly seared and finished with Parmesan cheese. Eventually, the restaurant will offer more traditional omakase options for $125 per person, but those won’t be available until after the restaurant has been open for a bit.The Akira Back “pizza” is one of the signature items, says general manager Shane Martinez. It’s made with a tortilla on the bottom that is slathered with umami aioli, then layered with raw tuna and topped with truffle oil and microgreens.
