Sorry we can't go out tonight! We have plans with this pizza

I used to run the production kitchen on the TV competition show. One of the things that we had to keep in stock for every episode was fresh pizza dough, and when we wrapped, we were allowed to take home whatever leftover dough hadn’t been used that day. Needless to say, I took a lot of dough home. And I got really creative with it.

After one really long day of shooting, when I was starting to feel run down, I opened the fridge and freezer and stared blankly. I had a box of frozen spinach, pizza dough, yogurt, and a small piece of cheese. Saag Paneer pizza! Obvs! Somehow, it was the only thing that made sense: Quick, easy, healthy-ish, and not too heavy. Best of all, I got to crank my oven to 500° on a cold January night in my small New York apartment, the city equivalent of a roaring fire in a real fireplace.
