"First and foremost is that sense of family that I always got whenever I would sit in her kitchen. She was a fantastic cook," he said."I remember such fond memories of sitting in her kitchen, family being around and playing games and having such great conversations. I just wanted to pay a lot of respect to her."
"One of the first things I do whenever I travel is plan the next meal and plan where I'm going to have cocktails," he said."I continually take these mental notes of things that inspire me and things that I see that I would love to bring back to Jacksonville and have as a part of our food community and our drink community."
Avoiding the word"upscale," Floyd said Josephine's atmosphere will be"elevated." The goal is to have a friendly price point. Floyd said the menu will be flexible and large enough with enough fresh dishes, sauces and house-made bread to satisfy guests who eat there multiple times a week. The weekend brunch will include classic fare as well as some less well-known dishes such as crispy eggs, which are sunny side up eggs that are crispy on the bottom.
