Houstonians have their favorite restaurants for paella, but it’s also a dish that, with practice, can be mastered at home. We turned to chef Miguel Schubowitsch of Houston-based TerraMar Imports for a recipe and tips for home-made paella. Schubowitsch is the in-house chef for the gourmet food importer, specializing in international products from Greece, France, Italy and Spain, including a dizzying variety of paella-making equipment and ingredients.
Schubowitsch advises to invest in a proper paella pan and to use authentic, quality ingredients such as good olive oil, Spanish paella rice, saffron and spices, and paella broth that is invested with traditional paella seasonings. “Socarrat is not a dealbreaker,” Schubowitsch said. “But it’s definitely something Spanish people want.”The ingredients for authentic seafood paella include octopus, clams, squid, mussels, shrimp, and prawns.Use the best ingredients. Your finished dish will only be as good as the ingredients you source. That includes a proper paella pan, either polished steel or enameled steel are best options. Saffron, Spanish paprika, piquillo peppers and paella broth should also be sourced.
