Restauranteur and founder Stratis Morfogen picks up a to-go bag near a food locker at Brooklyn Dumpling Shop in New York City. The restaurant, which is now a franchise, has a contactless ordering system with temperature controlled food lockers. “People don’t think of dumplings as a full meal. I do,” says Stratis Morfogen inside the brand-new Deep Ellum Brooklyn Dumpling Shop. He was: He’s a fast-talking, big-thinking restaurant guy who threw ideas at me on FaceTime while he paced through his restaurant, then hung up. He says Brooklyn Dumpling Shop is a new-age restaurant that “respects the customer.” They’ll order on an app or at a kiosk in the store, then pick up the food from a warm locker, never interacting with a human.
In Dallas, the franchises are run by Park Cities resident Sam Cole. He plans to open at least six more.Britany Güereca, founder of Cafe Ciro, makes coffees in the parking lot of Tire Pro along S. Buckner Boulevard in Dallas. It's a family-run pop-up cafe. This summer, join me in driving to Cafe Ciro, wherever it pops up next. Britany Güereca started the business by selling Mexican coffees outside of her parents’ house,, and now, the pop-up effort has expanded all over Dallas and includes breakfast items like pancakes and chilaquiles. I’ll be ordering a Churro drink: espresso, milk, caramel, whipped cream and cinnamon sugar.
