“They’re really happy up there,” Flores says of plantings including oregano, basil, lippia, sweet pepper, hot pepper, tomato, tomatillo, summer squash, eggplant and lemon grass. After browsing the market, families can take a tour of the rooftop farm to learn how its crops grow in only 12 inches of soil. They’ll hear about future irrigation plans including using condensation from POST’s HVAC system to water plants.“Many of these kids have never seen a food plant,” he says of the opportunity to show children how crops grow before they reach their plates. They want to know the life span of the plants they eat, he says.
On the tours, families will learn what tasks they can tackle at Skyfarm’s weekly volunteer sessions, which are open to children.
