Chasney Estates owner Isabel Chasney discusses her olive oil and lavender estate in the town of Swan Hill, including their culinary creations of lavender gelato and gin.
She said lavender is a “secondary crop” at the Victorian estate as they lost an olive harvest due to wind blowing its blossom off.
“So, we decided to do the lavender and it’s the perfect climate for it,” Ms Chasney told Sky News host Paul Murray. “We predominantly do culinary lavender – we make lavender gelato, lavender gin and we get … the local café to make lavender scones for us.”
