Terry Thomsen, the Pizza Bagel Lady from the West Side Market, has moved and expanded her production in Clark-Fulton's Hildebrandt Building. CLEVELAND, Ohio -- You may see The Pizza Bagel popping up more around Northeast Ohio. That’s because the Pizza Bagel Lady, innovator of the West Side Market’s famous lunchtime indulgence, has moved her baking operation from Fairview Park to the Hildebrandt Building in Cleveland’s Clark-Fulton neighborhood.
With the move, owner Terry Thomsen has more than tripled her footprint, from 1,250 square feet to 4,000 square feet. In the Walton Avenue building, she joins several culinary ventures, including Storehouse Tea Company, Wake Robin Fermented Foods and several food truck companies. Thomsen, who earned the title “pizza bagel lady” five years ago, improved the original recipe at that time. This year, she turned her R&D efforts to creating a great-tasting vegan bagel that was introduced last week.
The new space gives Thomsen the opportunity to expand her food service and retail business, something she couldn’t accommodate in the smaller space. “We’ve been at the West Side Market for 16 years and producing in Fairview for 12-plus years. We couldn’t grow there. When I found out that space in the Hildebrandt Building was opening up, I knew it would be a fit for us.”
