In celebration of his namesake restaurant’s 30th anniversary, the chef shares his go-to spots in NYC.
“The vibe of the city was so high…there was hope of change, and New York was New York, there was opportunity,” says Daniel Boulud of arriving in 1982, a 27-year-old chef eager to tantalize the American palate with French cuisine.
“The time of Delmonico’s and the Four Seasons,” he says, “that was a real inspiration, understanding that it’d be great to be part of this history.” Attuned to the possibilities, “I decided to live on the Upper East Side and make that my village.” Now, with seven establishments dotting Manhattan—his first, Restaurant Daniel, celebrated 30 years this spring—Boulud takesILLUSTRATION BY LAUREN TAMAKI.

Exploring the effect of water on seismic wave attenuation in the upper mantleThe oceanic lithosphere, which constitutes the top layer including Earth's crust and mantle below the oceans, has long intrigued scientists due to its peculiar behavior. This layer appears to glide over a weaker region below called the asthenosphere, characterized by high seismic attenuation and low shear wave velocity.

Exploring the effect of water on seismic wave attenuation in the upper mantleThe mechanism facilitating the smooth movement of the oceanic lithosphere over the underlying asthenosphere (upper mantle) remains poorly understood. Recently, researchers from Japan investigated the effect of water on the seismic properties of olivine rocks, finding that water retention in the asthenosphere can induce sharp drops in shear wave velocity. This also explained other seismic changes observed at the lithosphere-asthenosphere boundary. These findings provide invaluable insights into the diverse seismic activities on Earth.
