During the coronavirus pandemic, oyster farming at businesses like taylorshellfish has become essential — especially to Asian communities.

All I hear on TV is, ‘Let’s make America great again.’ They don’t want us — people with brown skin — they don’t want us here. But we’re the ones doing the dirty work. And their work is essential, she says, not just for right now but the future, as oyster farmers plan eight to 10 years in advance. Abandoning their farms altogether would have been devastating for the company financially and for the food chain as a whole. If farmers ignore oysters, they grow long and lean, like a bananas. No one wants to buy banana-shaped oysters.People think of farming and they think of agriculture; they don’t think of shellfish farming.
Aisha Prohim looks for oysters on the eastern shore of the Totten Inlet near Olympia, Wash., on May 11.Prohim plays an integral part in doing just that. Prohim understands she doesn't fit the image of a stereotypical farmer, with her petite, 4-foot-11 frame, a Seattle Seahawks scarf serving as a makeshift hijab and her quick smile. When she started oyster farming in 2008, after five years as a mushroom farmer, no one thought she’d last long.
